This is an updated version of Kasuya's "Devil" recipe, which tends to produce a very sweet cup. Check out Tetsu explaining this new technique in a video.

Water Temperature: 90°C / 194°F
Grind size: Medium-fine
Brew Time: 00:03:30
Insert the filter and rinse with hot water. Grind your coffee and put it into the filter. Place on the scales and zero them out. Prepare a bottle of cold drinking water. Close the switch.
0:00 Pour 40.0 - 50.0g. of water.
0:10 Wait.
0:35 Open the switch.
0:40 Pour up to 120.0g. of water.
0:50 Wait.
1:30 Pour up to 200.0g. of water.
1:40 Add cold water to the kettle to bring the temperature down to 70-80°C (158-176°F).
2:05 Close the switch.
2:10 Add up to 300.0g. of water.
2:20 Wait
2:45 Open the switch and wait for the complete drawdown.
